Recette: Homard tout simple...
Prenez autant de homard que de convive,
coupez les en 2 vivants et poilez les sur chaque coté 5 min en commançant par le coté chair.
puis flangez les avec un 5 cl de whisky (désolé, pas de photos).
Ensuite dans un plat à four poivrez les, un peu de muscade et qq noisettes de beurre,
enfournez les pour 15 min à four chaud
et servez accompagnés de Quinioa et d'un Chablis 1er Cru (ou autre...)
Résultat...

GDP, pour un économiste anglo-saxon, c'est le ''gross domestic product", notre PIB. Pour un oeno-septimano-phile, c'est un raccourci pour le domaine de la Grange des Pères.

Hier soir, dans les locaux de notre caviste préféré, le 2004 blanc, puis huit millésimes en rouge : de 2004 à 1995 en sautant 97/98.
La Grange des Pères, c'est un des rouges mythiques du Languedoc, fabriqué du côté d'Aniane, lieu que tous ceux qui ont vu le film Mondovino connaissent. Laurent Vaillé, le vigneron du domaine, fait d'ailleurs une petite apparition dans la série de DVD réalisée par Jonathan Nossiter. Il y défend, contrairement à certains vignerons influents du coin, l'implantation dans sa région de la famille Mondavi, projet qui n'a finalement jamais vu le jour.
Vaillé, c'est d'ailleurs un peu le spécialiste des contre-pieds. Du genre à intégrer du cabernet-sauvignon dans l'assemblage de son rouge, s'excluant de fait de l'AOC, conduisant à une classification de son vin sous l'appellation "Vin de pays". Du genre à bâtir un domaine à partir de rien, en ayant dès le début (son premier millésime remonte à 1992) l'ambition de faire un grand vin, fût-ce avec des vignes jeunes. Du genre à travailler en "bio", mais à se moquer des certifications. Du genre à fuir la popularité, les salons, à ne pas recevoir les particuliers au domaine, mais à vendre son vin plus de 50€.
Oui, la Grange des Pères, c'est cher. Mais c'est bon !
2004, velouté, charmeur, équilibré. 2003, marqué par le millésime, fruits cuits, moins de longueur. Gourmand, mais globalement décevant [1] pour la plupart des présents [2]. 2002, magique, un de ces rares moments que recherche l'amateur où la dégustation d'un vin donne des frissons dans le dos. Fondu et explosif en même temps, long, ample, doté d'un nez très médocain. Dans l'euphorie de l'instant, j'ai mis un 19 sur mon petit papier. C'est sans doute un peu surévalué, mais bah ... 2001, presque aussi classieux mais dans un style plus bourguignon, pinote presque, encore sur la retenue et avec des tannins qui demandent encore un peu à se fondre, contrairement à ses trois plus jeunes prédecesseurs. Miam miam. Le 2000 marque la transition : le nez parait plus évolué. On perçoit des notes de torréfaction, mais qui ne viennent pas du bois. Comme sur le 2001, plus de matière, moins de velouté. Le 99 est celui qui m'a le moins plu, avec une acidité un peu trop marquée en bouche, un équilibre qui me semble nettement moins harmonieux, et qui me laisse perplexe sur sa capacité à vieillir davantage. Le 96 est aujourd'hui à point, et fait une belle synthèse du style du domaine. J'ai noté "manque de personnalité ?" ... [3]
Le 95, enfin, semble plus jeune que le précédent (plus de matière, tannins encore fringants), et encore apte à vieillir.
Ah, j'avais oublié le blanc. Un poil de bois au premier nez (contrairement aux rouges où les 24 mois d'élevage ne se font absolument pas sentir), grande richesse aromatique (miel, agrumes, fleurs blanches, pommes bien mûres - une pointe oxydative -), splendide longueur en bouche avec du gras et une très belle matière. Slurp.
Mes préférés : 2002, 2001 et 2004. Ne me demandez pas dans quel ordre, m'en fous, c'était un grand moment de vin.

Dommage d'avoir sauté 97, c'est sur ce millésime (difficile!) que j'ai les meilleurs souvenirs de Grange :)
Je note que 99 est à boire sans attendre, tout en me félicitant de son acidité marqué.
